RecipeTime - Spicy Chicken Stir-Fry with Green Beans & Lime

I loooove to eat out, when looking for places to live with my boyfriend, one of the things on my "must have" list were good restaurants within walking distance. Thankfully, there are a quite a number of yummy restaurants around us in Brookeline. That said, now that we have settled in and have more of a routine, cooking in has been the next item to tackle. Currently, we have been in a Blue Apron phase. We both like that it cuts out grocery shopping and, usually (sometimes they are a little too experimental), produces good meals without the expense of going out.  I especially like that it provides meal inspiration to recreate and simplify. Case in point this Chicken & Noodle Stir Fry we had a few boxes ago. It was SO good and easy, I knew I had to recreate and put my own spin on it. I have probably made the following recipe four times since having Blue Apron's version (I will upload a photo of my final product next time I make it! New phone means no old photos). 

10 oz  Chopped Chicken Breast (Free Range Organic)
1 Lime
1 Bag Trader Joe's Cauliflower Rice (I use fresh kind) or 1 bag of rice noodles cooked per instructions
6 oz Green Beans
1 Tbsp Coconut Aminos
1 Tbsp Hot Sesame Oil (I get this one at Whole Foods or Shaw's)
Olive Oil as needed**
Optional: Sesame seeds for garnish

*All but the hot sesame oil and sesame seeds can be procured at Trader Joe's

1. Prepare the ingredients: Rinse the chicken and pat dry with paper towels and cut into smaller pieces. Zest lime.  Season chicken with salt, pepper and the lime zest. Halve the green beans and lime.
If making with noodles heat a small pot of water and begin process to cook noodles per package instructions
2. In a large pan (nonstick, if you have one), heat a drizzle of olive oil on medium-high until hot and the hot sesame oil. Add the seasoned chicken in an even layer. Cook, without stirring, 3 to 4 minutes, or until lightly browned. Add the coconut aminos sauce and green beans. Cook, stirring frequently, 2 to 3 minutes, or until slightly thickened and the chicken is cooked through. Turn off the heat.
3. While the chicken finishes cooking, heat a dash of olive oil in a wok if you have one otherwise a pot will do. Add the cauliflower rice, season with salt and pepper, and cook stirring occasionally, 3 to 4 minutes.
4. Add the cooked chicken and green beans to the cauliflower rice (or noodles) and stir together at high heat for 1 - 2 minutes. Squeeze in lime juice and stir for about a minute.
5. Serve the finished chicken & "rice" (or noodles) stir fry and garnish with sesame seeds if you like.


The whole process is under 20 minutes! 

*Subs: cauliflower rice for noodles & brocolli for green beans to accommodate diet restrictions if Paleo, Keto or Whole30 strict.

**This dish is meant to be spicy, if spice is not your game then I would cut out the hot sesame oil.
